- Toothpicks or kitchen twine, for securing
- ½ cup Chicken Broth (optional, for added moisture)

Preheat Oven: Preheat your oven to 375°F (190°C).

Prepare Ingredients:
- Wash and dry the spinach leaves.
- Chop the sundried tomatoes.
- Shred the mozzarella cheese.

- Butterfly the pork tenderloin: Cut lengthwise down the center of the meat, being careful not to cut all the way through. Open it like a book.
- Use a meat mallet to pound the pork to an even thickness.

Seasoning:
- Season both sides of the pork with salt and pepper.
- Sprinkle minced garlic over the inside of the pork.

Stuffing:
- Arrange the spinach leaves over one side of the pork.
- Spread the chopped sundried tomatoes over the spinach.
- Sprinkle the shredded mozzarella over the sundried tomatoes.

Rolling and Securing:
- Roll the pork tightly from one side to the other.
- Secure the roll with toothpicks or tie with kitchen twine at 1-inch intervals.

Cooking:
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear the pork on all sides until browned, about 2 minutes per side.
- If using chicken broth, pour it into the skillet now.
- Transfer the skillet to the preheated oven.
- Roast for about 20-25 minutes or until the internal temperature reaches at least 145°F (63°C).

- Once done, remove from the oven and let it rest for about 10 minutes.
- Remove the toothpicks or twine, then slice the pork into medallions.
- Serve immediately, drizzled with any juices from the skillet, and enjoy your Tricolore Stuffed Pork!
