Chicken Shawarma Recipe – YUM!!!

Here is a great recipe for Chicken Shawarma.  Your going to need to take a trip to the grocery store for spices you probably don’t have, but believe me, it’s worth it.

For the chicken shawarma:

  • 2 pounds boneless chicken breast or thighs
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cayenne pepper
  • 1 tablespoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 5 teaspoons kosher salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons lemon juice
  • 3 tablespoons olive oil
 

For the tahini

  • 2 tablespoons tahini paste
  • 2 tablespoons olive oil
  • 3 tablespoons water
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1/2 teaspoon kosher salt, more to taste if desired
 

Instructions

 

For the chicken shawarma:

  1. Combine all of the marinade ingredients in a large bowl.
  2. Mix well.
  3. Add the chicken to the marinade and turn to make sure it’s completely coated.
  4. For most flavorful results, marinate overnight – otherwise 2 hours will do it.
  5. Preheat the grill to 500 degrees F.
  6. Cook the chicken on the grill over direct heat, for about 4 minutes per side, or until a thermometer inserted in the thickest part reads 160 degrees.
  7. Remove the chicken from the grill and let rest for 10 minutes (it will continue to cook.)
  8. Slice and serve with the tahini sauce and side dishes of your choice.
 

For the tahini sauce:

  1. Combine all of the tahini sauce ingredients in a small bowl.
  2. Stir well until smooth.
