Ingredients

Chicken

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Bruschetta Topping

  • 4 Roma tomatoes, diced
  • ¼ cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • Salt and pepper to taste

Optional

  • Fresh mozzarella slices
  • Balsamic glaze for drizzling

Instructions

1. Make the Bruschetta

In a bowl, combine:

  • Tomatoes
  • Basil
  • Garlic
  • Balsamic vinegar
  • Olive oil
  • Salt and pepper

Mix and let sit while you cook the chicken.

2. Season the Chicken

Pat chicken dry and season both sides with:

  • Garlic powder
  • Italian seasoning
  • Salt
  • Pepper

3. Cook the Chicken

Heat 2 tbsp olive oil in a large skillet over medium-high heat.

Cook chicken for about 5-7 minutes per side until the internal temperature reaches 165°F.

4. Assemble

Place chicken on a serving platter and top generously with the bruschetta mixture.

Optional:

  • Add a slice of fresh mozzarella while the chicken is hot.
  • Drizzle with balsamic glaze.
