This one is a family favorite with a sweet and tangy flavor. Best if grilled!
Ingredients
For the grilled chicken:
2 lb boneless, skinless chicken thighs
¼ cup lime juice
3 Tbsp honey
3 garlic cloves, minced
2 Tbsp olive oil
2 Tbsp chopped cilantro
1 tsp smoked paprika
1 tsp cumin
1 tsp salt
¼ tsp black pepper
For the honey-lime finishing sauce:
2 Tbsp lime juice
1 Tbsp honey
1 Tbsp finely chopped cilantro
(I added Smoked Paprika to this sauce and we loved it)
Instructions
Make the marinade
In a large bowl, whisk together lime juice, honey, minced garlic, olive oil, chopped cilantro, smoked paprika, cumin, salt, and black pepperMarinate the chicken
Add the chicken thighs and coat well with the marinade. Let them marinate for at least 15 minutes, or up to a few hours if you have the timeGrill the chicken
Preheat your grill to medium-high heat. Grill the thighs for about 5–7 minutes per side, or until they reach an internal temperature of 165 °F (74 °C) and develop a nice char.Prepare the honey‑lime sauce
While the chicken rests, whisk together lime juice, honey, and chopped cilantro to make the finishing sauce.Serve
