Tricolore Stuffed Pork

Ingredients:

  • 1 Pork Tenderloin (about 1-1.5 lbs)
  • 1 cup Fresh Spinach Leaves
  • ½ cup Sundried Tomatoes, chopped
  • 1 cup Mozzarella Cheese, shredded
  • 2 tbsp Olive Oil
  • Salt, to taste
  • Pepper, to taste
  • 2 cloves Garlic, minced
  • Toothpicks or kitchen twine, for securing
  • ½ cup Chicken Broth (optional, for added moisture)

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).

  2. Prepare Ingredients:

    • Wash and dry the spinach leaves.
    • Chop the sundried tomatoes.
    • Shred the mozzarella cheese.
  3. Prepare the Pork:

    • Butterfly the pork tenderloin: Cut lengthwise down the center of the meat, being careful not to cut all the way through. Open it like a book.
    • Use a meat mallet to pound the pork to an even thickness.
  4. Seasoning:

    • Season both sides of the pork with salt and pepper.
    • Sprinkle minced garlic over the inside of the pork.
  5. Stuffing:

    • Arrange the spinach leaves over one side of the pork.
    • Spread the chopped sundried tomatoes over the spinach.
    • Sprinkle the shredded mozzarella over the sundried tomatoes.
  6. Rolling and Securing:

    • Roll the pork tightly from one side to the other.
    • Secure the roll with toothpicks or tie with kitchen twine at 1-inch intervals.
  7. Cooking:

    • Heat olive oil in an oven-safe skillet over medium-high heat.
    • Sear the pork on all sides until browned, about 2 minutes per side.
    • If using chicken broth, pour it into the skillet now.
    • Transfer the skillet to the preheated oven.
    • Roast for about 20-25 minutes or until the internal temperature reaches at least 145°F (63°C).
  8. Resting and Serving:

    • Once done, remove from the oven and let it rest for about 10 minutes.
    • Remove the toothpicks or twine, then slice the pork into medallions.
    • Serve immediately, drizzled with any juices from the skillet, and enjoy your Tricolore Stuffed Pork!

Optional Serving Suggestions:

  • Serve with a side of roasted vegetables or a light salad.
  • Drizzle with a balsamic reduction or your favorite sauce if desired.
