Prep Time: 15 minutes
Cook Time: 15 minutes
Total Time: 30 minutes
Yield: Approximately 2–3 pint jars
Ingredients
2 pounds fresh jalapeños
2 cups apple cider vinegar (5% acidity)
4 cups granulated sugar
1 teaspoon garlic powder
1 teaspoon ground turmeric
1 teaspoon celery seed
½ teaspoon ground ginger
½ teaspoon cayenne pepper (optional, for extra heat)
Instructions
Step 1: Prepare the Jalapeños
Wash the jalapeños and slice them into ¼-inch rounds. Leave the seeds for extra heat or remove some for a milder flavor. Wear gloves when slicing.
Step 2: Make the Sweet & Spicy Syrup
In a large saucepan, combine the apple cider vinegar, sugar, garlic powder, turmeric, celery seed, ginger, and cayenne pepper.
Bring to a boil over medium-high heat, stirring until the sugar dissolves. Reduce the heat and simmer for 5 minutes.
Step 3: Cook the Jalapeños
Add the sliced jalapeños to the syrup. Simmer for 4–5 minutes, stirring occasionally, until the peppers darken slightly and begin to soften.
Step 4: Fill the Jars
Using a slotted spoon, transfer the jalapeños into clean glass mason jars.
Return the remaining syrup to a gentle boil and simmer for another 5–7 minutes to concentrate the flavor.
Carefully pour the hot syrup over the jalapeños until completely covered.
Step 5: Cool and Refrigerate
Allow the jars to cool briefly, then cover and refrigerate promptly.
Let the jalapeños sit for at least 48 hours before eating. For the best flavor, allow them to develop in the refrigerator for 1 week.

Tips for the Best Cowboy Candy
Sweeter: Use the full 4 cups of sugar for a classic sweet-and-spicy flavor.
Spicier: Leave the seeds and membranes intact and add the optional cayenne pepper.
Thicker Syrup: Simmer the syrup a few extra minutes after removing the jalapeños.
Storage: Keep refrigerated and use within approximately 2 weeks. Freeze for longer storage.
Important: This is a refrigerator recipe, not a shelf-stable canning recipe. Do not store these jars at room temperature. Shelf-stable canning requires a tested recipe and proper processing.
Bonus Tip: Save any leftover syrup! Brush it onto smoked ribs, mix it into BBQ sauce, or drizzle it over grilled pork tenderloin.
Enjoy your homemade Cowboy Candy!
